If you're using onion start from the first instruction, if you're not using onions, skip the first instruction and start from the following step. Sautee the onion; heat oil in a pan over medium heat then add the chopped onions, season with salt (this helps release the moisture) and allow to cook don't let it burn.
Put all the meatballs ingredients in a bowl except the olive oil (this is for sauteeing the chopped onion) and mix all together, including the "sauteed onion" (if you're using) and mix. Form the mixture into small balls (try as much as possible to be the same size) and place them on a plate.
∗If you're using an oven preheat the oven to 350 degrees F before forming the meatballs, and once you're done put the meatballs on a lined baking sheet then cook until golden brown
If you're cooking on a stovetop; place a skillet/pan on medium-high heat and coat it with oil and add the meatballs and cook until they are brown on all sides. Remove and place on a plate.

You can eat them immediately as it is or it can be frozen for later use. You can also add them into a pot of sauce.
Sauce:
In the same pan used for the browning of the meatballs, add onions and season, let it soft then add garlic for a few minutes. Add all the other ingredients, then season and cook until the content is reduced. Add the meatballs and stir, check the season and re-adjust if necessary and reduce the heat, stir occasionally and let it cook down.
Serve with spaghetti/pasta or rice... Enjoy! Shave some cheese over it if desired.
