Rinse the dry sorrel leaves (zobo leaves) under cold water, make sure you rinse thoroughly don’t fret if the color of the water looks like zobo drink, you have more than enough color in the leaves.
Clean the pineapple thoroughly, if you want to use the rind/peel you need to make sure the peel is cleaned thoroughly, or better still use the pineapple only.
To clean the pineapple, I used warm water and apple cider vinegar and I scrub all the nook and cranny of the pineapple then rinse with warm and cold water. Then peel and slice.
Add the zobo leaves (sorrel leaves), 4 slices of pineapple, all the pineapple rinds, garlic, ginger, and water to cover the whole pot about 12 cups. Place over a stove and bring to a boil, it took about 20 minutes.
Reduce the heat, if you're using sugar add sugar as little or as much as you like and allow the sugar to dissolve remove from the heat and allow to cool down completely.
Use a strainer/sieve to strain the drink, I didn’t pour the bottom part because there will be teeny weeny bit settle down if you want to pour everything be careful and can use a cheesecloth/muslin to strain the content.
Place in a refrigerator and allow to chill, serve and garnish with a slice of pineapple.
If you're using date syrup, feel free to add ice cubes and enjoy!
