Clean the fish, remove the intestine, make sure the fish is thoroughly cleaned. Pat dry and lightly score the fish about 2-3 spaces depending on the size of the fish. Make sure it is not too deep. Line a baking sheet with aluminum foil and place the fish.
Clean the peppers and grate or blend. Mince the ginger, garlic, add the suya spice, thyme, seasoning powder/cube and combine. You can blend everything together.
I prefer to add after blending especially because the pepper is too small and don’t want chunks of garlic or ginger in my fish. If you don’t mind you can blend all at once.
Coat the fish (in and out) with the blended pepper, place a couple of sliced onion inside the fish. Cover and leave for at least 30 minutes to infuse the spice(optional). In the last 15 minutes preheat the oven to 400 degrees F.
Bake the fish 15 minutes, the cover with a foil and continue the cooking for another 15 minutes. Turn off the oven, place about a teaspoon of butter on each and allow to melt by leaving the fish for about 5 minutes or more.
Serve and enjoy! This was paired with vegetable and plantain.
