Tzatziki Sauce

Ingredients

  • 1 Cup Plain Greek yogurt
  • 1 Cucumber (Peeled, seeded, grated, and squeezed)
  • 1 Teaspoon Lemon juice
  • 1 Teaspoon Dill
  • 1 Garlic (minced); use more if you desire
  • 1 Tablespoon Olive oil (or your choice)
  • Salt and pepper to taste

Instructions

  1. Peel the cucumber, use a small spoon to scoop out the seed, chop into a food processor or blender season with salt then pulse/grate, you can as well dice with a knife, I diced mine.

    English cucumber is also good for this recipe, if you're using an English cucumber you don't need to scoop.

  2. Pour into a muslin cloth, cheesecloth, or clean kitchen towel and squeeze out the liquid. Make sure you don’t skip this part, I got about half a cup of liquid. You can also use your fist just scoop some and make sure you scoop out all the liquid as much as possible. You don't want your sauce watery.

  3. Add the cucumber and the rest of the ingredients, season with salt and pepper

  4. Refrigerate, you can serve over chicken, wrap, kebabs, gyro, sandwich, pita and so many more. If you wish drizzle some oil over the sauce.
