Stew (Ata din din)

Ingredients

  • 2 Roma tomatoes
  • 1 Rodo
  • 1 Big Red bell pepper (about 1.5 of the normal size)
  • 1 Small Onion (chopped)
  • 1 Small Garlic clove
  • 1 Teaspoon Fresh ginger
  • 2 Green onions (optional); diced
  • Seasoning powder/cube
  • Salt to taste
  • 1/4 Cup Vegetable oil or palm oil
  • 1/2 cup Diced fried chicken (use any protein of your choice)

Instructions

  1. Clean, red bell pepper (tatashe), rodo, ginger, garlic, half of the onion, rinse and roughly blend if possible without water. You can also chop with hand if you wish then grate the ginger and garlic.

  2. Heat oil in a saucepan, saute the remaining half onion (chopped) the add chopped /blended pepper. Fry until the pepper reduces in size. Season with salt and seasoning powder and stir.

  3. Add the chicken (or any protein you're using), diced green onions and combine. Continue to fry until the oil floats. Check the seasoning and readjust if necessary.

  4. Serve with fried yam.
