Season chicken with any ingredients of your choice (you can use cooked chicken you have, store-bought rotisserie chicken). You can also season with salt boil or poach and shred, just use any method of your choice. I seasoned and cooked in an air fryer.
Cook the bacon, I used turkey bacon and dice or crumble them.
While chicken is cooked, chop grapes, if you’re using grapes with seeds remember to remove the seeds. Open an avocado and dice up, remove the tomato seeds and dice, chop the parsley and lemon juice, and set everything aside.
Shred the cooked chicken with 2 forks in a big bowl.
Add chopped ingredients to the shredded chicken. If you love nuts you can add nuts like roasted pecan, or any nuts of your choice.
Add yogurt (mayo or sour cream), and combine. You can add yogurt little by little until you get the consistency of your choice. Season with salt and pepper. Chill in the refrigerator to allow all the ingredients to mellow.
Voila, your chicken salad is ready!
I used cucumber, buttery crackers, and multigrain crackers as shown in the picture.
