Chicken Salad with Grapes is one of my (and family) favorite things to snack on. I love it because you can make it your own by adding your choice of ingredients, it is delicious, flavorful, and creamy! You can poach/boil or grill or bake your chicken even you can use an air fryer or even you a store bought chicken, shred the cooked chicken or dice if you desire.
I added grapes, avocado, turkey bacon, if you don’t like grapes you can use apples, you can make it without fruits. To make it healthier I used plain Greek yogurt instead of mayo. So, this recipe is easy and delicious, make it as you like add your choice of fruits, nuts, you can include chopped celery, and serve crackers, cucumber, toasted bread, croissant or eat as is. Allow chicken salad with grapes to chill before serving.
You might want to try:
- 3 Turkey bacon (cooked and chopped)
- 1 large chicken breast (cooked and shredded)
- 1/2 cup seedless grapes (diced or more)
- 1 Tomato (chopped)
- 2 teaspoons parsley
- 1 Ripe avocado (diced)
- ½ cup Plain Greek yogurt (or sour cream or mayo or sour cream)
- 1 teaspoon lemon juice
- Salt and pepper
-
Season chicken with any ingredients of your choice (you can use cooked chicken you have, store-bought rotisserie chicken). You can also season with salt boil or poach and shred, just use any method of your choice. I seasoned and cooked in an air fryer.
-
Cook the bacon, I used turkey bacon and dice or crumble them.
-
While chicken is cooked, chop grapes, if you’re using grapes with seeds remember to remove the seeds. Open an avocado and dice up, remove the tomato seeds and dice, chop the parsley and lemon juice, and set everything aside.
-
Shred the cooked chicken with 2 forks in a big bowl.
-
Add chopped ingredients to the shredded chicken. If you love nuts you can add nuts like roasted pecan, or any nuts of your choice.
-
Add yogurt (mayo or sour cream), and combine. You can add yogurt little by little until you get the consistency of your choice. Season with salt and pepper. Chill in the refrigerator to allow all the ingredients to mellow.
-
Voila, your chicken salad is ready!
-
Serve with cucumber, cracker, lettuce, croissant.
-
I used cucumber, buttery crackers, and multigrain crackers as shown in the picture.
