Melt the butter and set aside to cool, add thyme, parsley, and salt.
In a bowl, whisk the flour, sugar, salt, and baking powder.
Add the yogurt and combine with your hand until smooth or use a stand mixer and mix on low until the dough is smooth and elastic.
Place the dough on a floured work surface and knead.
make sure the dough is smooth and elastic.
Cut the dough into 6 balls and work with one at a time. Roll each dough out with a rolling to form a circle.
Heat a tablespoon of oil in a skillet over medium-high heat, brush the rolled-out dough with the butter mixture and place the dough into the hot skillet (butter side down) and cook 1-2 minutes depending on how hot the skillet is. Don’t overcook the dough if not it will dry out and might break.
Brush the top side with butter mixture and flip to cook for about 1-2 minutes.
Remove and place on a plate and cover with a kitchen towel to keep the flatbread warm.
Repeat the process until you’re done with the dough. Flatbread should be soft and be able to be folded.
Serve with the topping of your choice. Avocados, sliced tomatoes, chicken, and lettuce are a great choice of topping. Avocados and egg also work well with the flatbread, you can turn the flatbread into pizza.
