In a small plate, add eggs, half and half or milk, season with salt and pepper and set aside. You desire you can hold on seasoning and season while cooking.
Plating: Place the bottom buns on a plate and spread butter over the toasted bagels. Top with cooked egg including the cheese and fold the deli meats into two.
Top with cooked egg, add sliced avocados (avocados can be mashed and season with salt and pepper and spread on the bagel directly) then caramelized onion.
Add the top buns, if you like hot sauce sprinkle some before you add the top buns.
