You might want to try;
- 2 bagels (sliced and toasted)
- 3 medium eggs or (2 large)
- 2 Tablespoons half and half (or milk)
- 2 slices cheese (provolone/Swiss or your choice)
- 1 ripe hash avocado (sliced or mashed)
- 3-4 tablespoons unsalted butter (plus more for serving)
- 1 teaspoon olive oil
- ½ onion (caramelized)
- 4 slices deli slices (I used honey smoked turkey breasts or your choice)
- Salt and pepper to taste
Slice onion and caramelize in a small pan over medium high heat using a teaspoon of olive oil and butter each, season with salt to draw out the liquid.
Stir consistently to avoid burning, it takes about 8 minutes, then transfer the onion to a plate.
Slice bagels in half horizontally and toast in a toaster or in a pan/skillet. If you’re toasting in a pan spread butter on the bagel and toast in a hot pan, if you’re toasting a in a toaster spread butter afterward.
In a small plate, add eggs, half and half or milk, season with salt and pepper and set aside. You desire you can hold on seasoning and season while cooking.
In the same pan used to caramelized onion, remove any black bits with a paper towel and add about 2 tablespoons butter, allow to melt and tilt the pan around to allow butter to coat the pan. Add whisked eggs, use a spatula to lift the cooked egg around this allows the uncooked eggs to run underneath and cook.
Use a spatula to divide the eggs into two, add a slice of cheese each, top with two deli slices and leave for a few seconds to allow cheese to melt and deli turkey to warm.
Plating: Place the bottom buns on a plate and spread butter over the toasted bagels. Top with cooked egg including the cheese and fold the deli meats into two.
Top with cooked egg, add sliced avocados (avocados can be mashed and season with salt and pepper and spread on the bagel directly) then caramelized onion.
Add the top buns, if you like hot sauce sprinkle some before you add the top buns.
Serve and enjoy!
