Fresh corn and pepper is a very good side dish to enjoy with mashed potatoes, fish, stuffed pepper and many more.
This fresh corn and pepper require very minimal ingredients and most of them are what you would have in your pantry. I used fresh sweet corn on the cob but feel free to substitute frozen sweet corn. You can also add any of your favorite herbs or green onion.
This fresh corn and pepper recipe could be tweak very easily if you want it spicy and some chili to it. This is a very easy side dish you would want to try, I could easily chow down the whole dish of this fresh corn and pepper…lol, it is that good!
You might want to try;
Herb Mashed Potatoes with Cream Cheese
- 2.5 Cups Sweet corn kernel
- ¼ Cup Red bell pepper chopped
- ¼ Cup Green onion
- 2 Teaspoons Unsalted butter
- Salt and pepper

Melt the butter over medium-high heat in a non-skillet. Chop the herb, remove the corn from the cob, and also chop the pepper.

Add the bell pepper, parsley, and season with salt and pepper. Cook until the vegetables are soft and make sure you stir continuously.

Stir in the corn.

cook until the corn is cooked. Season with salt and pepper then stir, take off the heat.

Serve and enjoy!
