Fried Sliced Potatoes

I love sliced potatoes so I needed to take it a little bit further and which gives birth to these fried sliced potatoes.  It is simple and easy to make and trust me it is tasty. These fried sliced potatoes could be enjoyed as a snack or meal.

In the recipe, I soaked the sliced potatoes and pat them dry before frying, this help with the starch and the texture. I also used a small jalapeno, I removed the seeds because that’s where the heat comes from, you don’t have to use jalapeno if you don’t want any heat so it is totally up to you to decide to use or use just sweet pepper.

Fried Sliced Potatoes
Ingredients
  • 2 pounds Russet potatoes (or Irish or Yukon potatoes)
  • 2 Sweet peppers (any color, seeded, and chopped)
  • 1 small jalapeno; seeded, chopped (optional)
  • 1/4 cup sweet onion (chopped)
  • Salt and pepper
  • Enough oil for frying
Instructions
  1. Soak and scrub the potatoes.

  2. Thinly sliced and soak for at least 30 minutes. Line the sliced potatoes on a tray and pat dry.

  3. Heat oil over medium heat and fry the potatoes. Drain and set aside
