Sweet potato is another twist, I’ve used potatoes and sweet potatoes in many dishes but I’ve never used sweet potatoes for sweet potato hash and to say we loved it is an understatement. This sweet potato contains turkey breast and vegetables which helps with the flavor but you can substitute chicken breast, sausage in place of turkey or make the hash without it.
When making this recipe make sure you don’t cut your sweet potatoes too big because the smaller the better. If it’s too big it will take a longer time to cook or you’ll cook just the outside and the inside would still be raw. You can slightly cook the potatoes if you desire or just follow my directions below.
You might want to try;
Herb Mashed Potatoes with Cream Cheese
- 4 Cup Sweet potatoes (peeled and cubed)
- 2 Cups Turkey breast (cut to small bites)
- 1.5 Bell peppers (I used 3 colors; chopped)
- 1 Jalapeno (or any chili; seeded and chopped)
- 1 Onion (chopped)
- 1 Tablespoon Oregano , paprika, garlic powder and ginger powder (each)
- 1 Teaspoon Cumin
- 4 Tablespoons Extra olive oil (or more)
- 2 Green onion (chopped for garnish)
- Salt and pepper to taste
-
In a small bowl, combine, paprika, oregano, cumin, garlic powder, ginger powder, salt, and pepper.
-
In another bowl, add the turkey breast (you can use chicken or sausage) and season with some of the seasoning mixed earlier. Place a skillet in over high heat, add about 2 tablespoons of oil and cook the seasoned turkey on both sides.
-
The smaller the turkey faster it cooks. When the turkey is cooked remove and set aside.
-
In the same skillet, add the remaining oil and add the chopped sweet potatoes, make sure you cut the sweet potatoes small; the smaller the faster it will cook.
-
Cook the potatoes making sure you’re stirring to avoid burning. Make sure the potato is cooked or at least 98% cooked remove and set aside.
-
In the same skillet, add more oil if you need to and saute the chopped onion for a few minutes, add chopped pepper (you can use a food processor to pulse too) stir and season with the remaining seasoning used for the turkey, salt, and pepper.
-
Cook for about 3 minutes, return the sweet potato and continue to cook until soft enough to eat and fully cooked, add the turkey and combine, check the seasoning and readjust if necessary.
-
Garnish with green onion.
-
Serve and enjoy!
