Stuffed mini meatloaf muffins are basically prepared as you would with the traditional Meatloaf that I shared sometimes ago check it out. However, stuffed mini meatloaf muffins are cooked a little quicker and the method I used was a little bit different.
These meatloaf muffins were stuffed with cheese, I used cheese four sticks cut into three and put inside the beef before covering it. The cheese took the meatloaf to another level…lol. If you’re not a cheese fan or don’t have it, you can make it without it.
You can use different types of meat, you can use veal, turkey, or any combination of your choice. These meatloaf muffins can be paired with mashed potatoes, vegetables of your choice, or just as is.

Herb Mashed Potatoes with Cream Cheese
- 2 Pounds Ground beef (or a mixture of veal, ground beef or ground turkey)
- 2 Eggs (beaten)
- 2/3 Cup Panko Breadcrumbs (or your choice)
- 1 Tablespoon Olive oil
- 2 Teaspoons Dried thyme
- 1 Big Onion (chopped)
- 1 Tablespoon Worcestershire sauce
- 2 Tablespoons Tomato paste
- 4 String cheese (cut into e each)
- 1/8 Cup Beef stock (or any stock)
- Ketchup for glazing
- Salt and pepper

In a sauté pan or pot, add chopped onion, thyme, salt, and pepper. Stir and cook until the onion is softening over medium-low heat, it takes about 5-7 minutes.

Add the tomato paste, Worcestershire sauce, beef stock (or anyone you’re using) and tomato paste then stir and cook until the liquid dry and the quantity reduces. Take off the heat and allow to cool down completely.

In a medium bowl, add the ground beef, breadcrumbs, eggs, salt, and pepper. Mix to combine.

While the onion mixture is cooling, preheat the oven to 350 degrees F and spray the muffin pan with cooking spray or grease with oil.

Add the onion mixture and gently combine don’t over mix.
Scoop small quantity of the ground beef mixture on your palm gently stuff in the cheese and cover with the other hand. Place into the greased pan and continue until you’re done with the mixture.

Glaze the top with ketchup or just drizzle across each meatloaf.

Bake in the preheated oven for 30-35 minutes until the meatloaf is fully cooked. To test if it is fully cooked insert a toothpick into the middle of meatloaf if it comes out clean it is done.

Serve with your favorite side dish like broccoli and crushed potatoes, mashed potatoes or by itself.
