Egg salad is one of my favorites food to eat for breakfast because of it’s simplicity and flavors. If you have hardboiled eggs at hand just peel, chop and mix everything together and chow down or scoop some on toast slices of bread with avocados if you desire.
If you need to boil eggs, add eggs into a sauce and cover with cold water and bring to a rolling boil, cover and let it sit for about 10 minutes. Remove and put the eggs in a bowl of cold water until the eggs are cold, roll the egg to crack then peel under running cold water.
Egg salad is easy and very versatile, you want it crunchy add chopped carrots, celery is also a good crunch texture for egg salad. You can add mustard, Worcestershire sauce, some fresh lemon juice for freshness and acidity. Red pepper flakes for some heat. if you want it more creamy add more mayonnaise.
You might want to try;
Avocado Toast with Poached Egg
- 4 Hardboiled eggs (chopped)
- 2 Tablespoon Mayonnaise (use less or more)
- 1 Teaspoon Paprika
- 1 Tablespoon Pickle (chopped) or more
- 2 Tablespoon Celery (chopped) or more
- 1/8 Teaspoon Garlic powder
- 1/8 Teaspoon Onion powder
- 1 Teaspoon Lemon juice (optional)
- Salt and pepper

If you don't have hard boiled eggs boil them.

Peel and chop the hardboiled eggs, chop the pickle, celery and add all the ingredients together.

Mix and check the seasoning readjust if necessary.

I love to eat it with it this way by spreading some slices of avocados over toasted bread, then egg salad with a sprinkle some spice for heat.

I love it with a kick of heat but it is optional.

Cover with the second slice of toasted bread.

If you desire, place the sandwich in the panini maker or chow down as it is. Enjoy with a cup of tea or milk.
