Easy Vegetables With Egg

Happy Monday everyone! Wishing Y’all a fulfilled and blessed week! The recipe I’m sharing today is vegetable and egg. It is a simple vegetable sauteed in pepper, garlic, and broth. It is an energy booster meal and was paired with eggs.

I made two types of eggs but you can stick to any one of the eggs you want. Both eggs are easy to make and very satisfying with the vegetable.

Squash and Zucchini were used for this recipe but feel free to use your favorite vegetable or add more as you please. I like my vegetable to have some crunchy texture to it and that was exactly how it was made if you need it softer add more broth but you wouldn’t want to cook all the nutrients out so be mindful of that.

For the pepper, I used sweet peppers but you can substitute bell peppers and any color of your choice. The whole dish was a hit and was enjoyed hope you would try it and leave your thought in the comment section and rate it.

Ingredients
  • 2 Zucchini (cut into chunks)
  • 2 Yellow Squash (cut into chunks)
  • 6 Sweet peppers (I used red and orange, you can also use red bell pepper)
  • 3 Tablespoons Olive oil (divided)
  • 4 Eggs
  • 3 Tablespoons Chicken broth (or vegetable broth; or more)
  • ½ Teaspoon Red pepper flake (for garnish, optional)
  • ½ Cup Onion (chopped)
  • ½ Tablespoon Dried Oregano
  • 1 Garlic (whole or minced)
  • Salt and pepper
Instructions
  1. Clean with vegetables and cut off the tips on both sides.

  2. Cut into big chunks; cut lengthwise into two then slice each vegetable into two then cut up into chunks and set aside.

  3. Remove the peppers stems, deseed the pepper rinse and chop, also peel the onion and chop up.

     Heat half of the oil in a saucepan or frying pan over medium-high heat.

     Add the whole or minced garlic, chopped onion, and the peppers, sauté for a few minutes.

     Season with salt and pepper and combine. If you're using a clove of whole garlic remove it now.

  4. Add the vegetables and combine

  5. Add the stock or water and stir. Check the seasonings readjust if necessary. Allow the liquid to dry then take off the heat.

  6. For the Egg

    You can poach or make sunny side egg to go with the vegetables.

     To poach: bring water to a boil in a saucepan add a dash of white vinegar. Use a ladle or spoon and make whirlpool (like rotating in a circular motion) gently drop an egg allow the white egg to cook remove, and place on paper towel to drain or put the egg in a water bath to stop the cooking then season with salt and pepper then serve with the vegetable. Sprinkle red pepper flake for heat.

  7. Sunnyside egg: heat the remaining oil over medium heat, add the egg reduce the heat, season with salt and pepper then cover and cook to your preference. Serve with the vegetables.

  8. I used both poached egg and sunny side egg with a splash of hot sauce for some kick.

  9. If you need some heat, add hot sauce or sprinkle red pepper flake
