This egg quesadilla is a very quick and simple breakfast. Just like any other quesadillas. this egg quesadilla has cheese. Other ingredients include avocado, tomato, and turkey deli slices which you can substitute with salami, bolognese, or any of your deli choice. You can add practically anything toppings you will like to your sandwiches.
Depending on the size of the flour tortillas you’re using, you can always double the recipe or reduce it if you’re making for just one person. You can also use just one tortilla and fold it into half instead of covering the toppings with another tortilla. Therefore, do whatever works for you but make sure the pan is not too big so the egg doesn’t spread out too much.
You might want to try;
Avocado Toast with Poached Egg
- 4 (8/10in.) Flour tortillas
- 3 Eggs (Seasoned with salt and pepper)
- 4 Slices Turkey deli (or ham/salami/or your choice of deli)
- 1 Big Tomato (cleaned and sliced)
- 1 Ripe avocado (opened, seed removed, and sliced)
- 1/2 Cup Shred cheese (provolone, swiss, any cheese of your choice) or slices; as much as you want
- 2 Tablespoons Butter (or oil)
- Salt and pepper

Clean tomato, slice, season with salt and pepper, and set aside, cut open an avocado into 2 remove the seed, and slice then set aside I prefer to shred my cheese instead of store shredded cheese, shred your cheese if you need to or just slice the cheese nothing fancy and set everything aside.

In a small bowl, crack eggs, season with salt and pepper, and whisk. Set aside.

Heat a non-stick pan, not too big, you want to use a pan that your tortilla will fit in. Add a tablespoon of butter or oil (use less or more if you desire), then add half of the whisked eggs.

When you notice the egg is cooking around the edge, add deli slices, tomato slices, and half of the avocado.

Top with cheese, add as much cheese as you want. You can also use cheese slices.

Place a tortilla and gently flip, be careful as the content is hot. You can place a flat plate to do this step. Cover the pan with a flat plate, turn the content onto the plate then gently slide back into the pan so the tortilla is sitting on the pan and the egg with the toppings facing up. When you are flipping make sure you have little or no egg liquid running. Add some cheese and cover with another tortilla. Then flip back so the top is on the bottom to allow cheese melts and the egg is almost cooked.

Remove and repeat the process for the second batch.

Slice and enjoy.
