This Coconut French Toast has to be one of the best french toast to eat. French toast upgrade with shredded coconut flakes, if you’re a coconut lover, this is for you, if you love sweet breakfast you don’t want to miss this delicious coconut french toast, if you like don’t really like sweet breakfast, you can adjust to your preference.
I used brioche, if you don’t have sweet tooth, use any thick slices of your favorite bread then use unsweetened shredded coconut. If you like it too coconutty use whole or any fresh milk. You can serve this toast with compote, syrup, honey, butter, or even powdered sugar.
You might want to try:
Cornbread Waffles and Fried Shrimps
- 4 slices Brioche/or any thick slices of bread (a day/2 day old is the best); or more
- ½ cup lite coconut milk/regular coconut milk (or your choice)
- 2 large eggs
- 1 cup sweetened/unsweetened shredded coconut flakes
- ¼ tsp vanilla extract (you can use coconut extract)
- Butter for cooking
- Fruits for serving (optional)
- Confectioners' sugar (optional)
- Syrup/honey

The above ingredients made more than 4 slices of bread, so if you're making about 6 slices you're with the measurements listed. If you're opening a new can of coconut milk you might need to blend the wet ingredients before transferring it to the shallow bowl. In a shallow bowl, whisk eggs milk, and vanilla or coconut extract.

Place shredded coconut flakes on a flat plate and set aside.

Heat a griddle or non-stick pan to about 350 degrees.

Dip each slice (one at a time) of bread in the whisked egg mixture, and coat both sides for several seconds. Make sure your bread slices are thick you don't want the bread to disintegrate while dipping into the egg mixture.

Transfer to the shredded coconut flakes and coat both sides.

Butter the griddle/pan and cook on both sides, make sure the griddle is not too hot so you don’t burn the toast. Cook to your desired color making sure the toast cooks through.

Flip and cook the second side until golden brown, remove and repeat the process on the remaining bread.

Serve with your favorite condiment. Syrup, whipped cream, butter, honey, fruits compote. Enjoy!
