If you love to buy take out you’d love this firecracker, I bought firecracker chicken from P.F Chang’s a few times and I loved it each and this is the closest you’d get to recreate at the comfort of your home. It is sweet, spicy, slightly spicy, and delicious!
The firecracker chicken was served with rice and sauteed broccoli, you can serve with your favorite side. I love to snack on any leftover…lol. I’ll link some chicken recipes below, please check them out and you won’t be disappointed. You can also use boneless chicken thigh for this recipe if that’s what you have at hand.
- 1.5 pounds boneless chicken breasts (clean and cut into small bites)
- 2 cloves garlic (minced)
- 1 tsp garlic and onion powder (each)
- Salt and pepper
- 1/3 cup cornstarch
- ¼ cup vegetable oil
- 2 eggs (whisk with salt and pepper)
- 1/3-1/2 cup buffalo hot sauce
- ½ cup brown sugar
- 2 tablespoons rice vinegar (or apple cider vinegar)
- Pinch of red pepper flakes

Add chicken into a small bowl, season with salt and pepper. Add cornstarch and combine.

In a small bowl, add eggs, season with garlic and onion powders, salt and pepper, and whisk.

Dip the coated chicken in the egg and coat on both sides.

Add oil into a skillet/pot and heat over medium heat. Cook the chicken and cook until golden brown on both sides about 4-5 mins. If you're using a small skillet you might need to cook the chicken in batches.

While the chicken is cooking, preheat the oven to 350 degrees. In a small bowl, mix red pepper flakes, buffalo hot sauce, brown sugar, rice vinegar and combine.

Remove all the cooked chicken to a paper towel-lined plate, drain any excess oil in the skillet and leave about a tablespoon, add garlic to the skillet and stir for a few seconds.

Add sauce and allow to simmer for a couple of minutes. Add chicken and bake in the oven for about 15 mins. If you're not using an oven-safe pan, transfer the sauce and chicken to a baking dish and bake until the sauce thickens, flipping halfway through.

Serve with rice and favorite vegetable and enjoy, you can garnish with toasted sesame seeds, green onion, or fresh herbs.
